Cooking – A Fun Activity and Nourishing Too

I was in the mood to do something fun and something different tonight, as to get rid of the things that have been weighing heavy on my mind.

COOKING- THE PERFECT CHOICE

Facebook has been posting plenty of Olive Magazine’s super easy, super tasty and super delicious recipes;  the Cauliflower Steaks with sauce vierge has been calling my name, so I answered.

For dinner I wanted to make a veggie meal, sans meat, that tasted refreshing and light.  I decided upon Olive Magazine’s Cauliflower Steak, Xorta-cooked endives, 2 pieces swiss cheese and sesame seeds.  The variety and taste of all the ingredients satisfied my taste buds, and I enjoyed the process of cooking.

THE PROCESS

Prepping the ingredients of my yummy meal was enjoyable and so was chopping the veggies, which were natural and bold.  The colors and freshness lured my eyes to the earth grown foods that are good for me and my family.

Dark green parsley

Medium green basil

Light green capers

Sunny yellow lemon

Bright cherry red tomatoes

Snow white shallots

Creamy beige cauliflower

Golden Olive oil

RECIPE

cauliflowers 2

olive oil for frying

butter for frying

SAUCE VIERGE

olive oil

baby plum tomatoes 16, diced

shallot 1, finely chopped

small capers 1 heaped tbsp

basil a handful, chopped

flat-leaf parsley a handful, chopped

lemon ½, juiced

step 1

Heat the oven to 220C/fan 200C/gas 7. Cut 2 thick slices from the middle of each cauliflower and keep the rest to eat later.

step 2

Heat a little oil and butter in a pan then cook the cauli on both sides until golden. Transfer to a non-stick baking sheet and season. Roast in the oven for 10-15 minutes until tender.

To make the sauce vierge, mix all the ingredients with 5 tbsp olive oil and season. Take the steaks from the oven,  spoon over the sauce and serve.

Cooking does not have to be time consuming or difficult. When your food is fresh and delicious you feel physically better and you look better, so carve out time to prepare and cook meals that satisfy and fuel your body!
