In The Name Of Summer!

An integral part of good health, in the summer and year round, is preparing and cooking your own meals and using food from your garden when possible.


Who ever said that cooking is hard or time consuming has not explored the vast array of quick n easy recipes that float in our universe.

NEW MINDSET: Cooking is fun, can be easy depending on the recipe and the result of cooking is a beautiful and healthful meal.

Much of the success of the recipe tasting good has to do with whether or not the food is in season or organic.

In the name of summer, I’d like to share an excellent idea that incorporates the best of summer produce….WATERMELON GREEK STYLE.


  • Sweet watermelon
  • Fresh Basil
  • Imported Greek feta cheese

That’s all!

Cut up watermelon into cubes and toss into a colorful bowl.  Add small pieces of fresh basil and crumbled imported feta on top of watermelon and you then have prepared a 10 minute recipe that is satiating, delicious and nostalgic.


For my recipe I was able to use fresh basil from my veggie garden, and the basil was so fresh and fragrant I almost didn’t want to eat it, but I did!

Basil is an excellent source of vitamin K and manganese; a very good source of copper, vitamin A (in the form of carotenoids such as beta-carotene), and vitamin C; and a good source of calcium, iron, folate, magnesium, and omega-3 fatty acids.

Eating basil fresh and uncooked has the best nutritional value.
