Olympic Phenoms Inspire My Meal Prep
The allure of the Olympics is multi faceted, and I love all of it. Mostly, I love to watch the fierce determination and focus planted on the faces of these super human athletes. Tonight watching Katie and Simone and Gabby and Michael’s razor sharp focus re-energized my urge to reach my personal goals.
We all have our own personal goals, and you know one of mine is to drop these last 6 pounds of chub.
PLANNING & PREPARATION
These two things take you to the goal line once you have committed to the work, and watching Coach Jill plan and prepare for the past two years has taught me it is possible to reach your own personal PR and be the best when you take time to “get ready,” for the work. In my case, the preparation is with the meal preparation.
SUNDAY MEANS TIME TO GET READY
During the Olympic Games this evening, I would take little breaks to check out FB for my favorite “quick n easy” recipes. I came across the salad in a jar meal and it’s ideal for weekly “ready to eat” lunch or dinner.
“Salad In A Jar” is so easy to prepare and it will stay fresh in the fridge for up to 7 days. I LOVE IT SO I TRIED IT!!!!
HERE IT IS….
Chop up all your veggies into little pieces: cucumber, tomatoe, green onion, cauliflower, broccoli, red pepper, carrots and mixed greens. (I included dill cuz I like it)
The next day or within the next week, when you are in a hurry and need your nutritional fuel in a snap, open the jar and dump the pre-made salad into a bowl. Add extra virgin olive oil, your favorite balsamic vinegar, kosher salt and pepper plus any cooked protein to the salad for a fast and easy meal that is delicious, fresh and nutritious. I can’t wait to reap the benefits of my Sunday night preparation.
